Tomato Soup

Super simple, super delicious, ready in half an hour

Serves 4
Cook time: 20 mins

Ingredients:

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 3 garlic cloves, peeled and crushed
  • 2 x cans tomatoes
  • 1 cup water
  • 1 tbsp sugar
  • ¼ tsp celery seed (or ½ tsp celery salt)

  • ¼ tsp dried oregano
  • Chopped fresh parsley
  • Chopped fresh basil
  • Pinch chilli flakes
  • Salt & pepper
  • Sour cream and grated Parmesan to serve

Method:

  1. Heat butter and olive oil in a large saucepan over medium low heat. Cook onion until soft and translucent. Add tomatoes, garlic, water, sugar, celery seed, oregano, chilli flakes, salt and pepper. Bring to the boil, add parsley and basil,reduce heat, cover and simmer for 15 minutes.
  2. Remove from heat and purée in blender or with a stick. Return to heat and add salt and pepper to taste.
  3. Serve with a blob of sour cream, sprinkled with Parmesan and pepper. Delicious with garlic / olive / rosemary bread or toast.
