Tasty Baked Chicken

Super easy

Serves 2

Ingredients:

  • 4 chicken thigh fillets, skinless
  • 1+ tbsp lemon juice depending on how tart you like it
  • 2 tbsp olive oil
  • Harissa & Moroccan spice mix
  • Paprika
  • 2 garlic cloves, crushed
  • Salt and pepper
  • Diced potatoes

Method:

1. Pre-heat oven to 200C.

2. Mix lemon juice, olive oil, crushed garlic, paprika, Moroccan spice powder and Harissa in a jug. Add salt and pepper.

3. Place chicken pieces in a baking dish with diced potatoes if using and pour mixture over making sure to cover everything. Cover and place in oven for 30 minutes.

4. Take out of oven and baste everything. Replace for another 15 or 20 mins with the lid off. Remove once everything looks golden and ready. At this stage you can add sliced mushrooms or other soft vegetables and toss them into the juices.
